Apple-Cinnamon Pork Loin

I don’t cook a lot of meat, but I keep seeing recipes for pork loin stuffed with apples and I knew I had a lot of time this weekend so I decided to go for it. I also made mashed potatoes (fresh, not from a box. I’m not a savage.) and English peas. It all turned out quite well. Will definitely make it again. I may have browned the pork using bacon grease from that morning’s breakfast feast as well…
